Rolled oatmeal is an excellent food to store. I store 50 lbs of rolled oatmeal in my pantry (in glass jars). Rolled oatmeal has at least a 28-year shelf life. When storing canned or dried foods, always store in a cool, dark, dry place, and avoid freezing or over-heating. Oatmeal is also an inexpensive way of dropping your cholesterol levels. Since you can use oatmeal as a substitute for bread, rice, or potatoes; you could happily eat oatmeal three times a day. There are many yummy oatmeal recipes; here are a few.
Peanut Butter & Jam Oatmeal
Ingredients
1/3 cup old-fashioned oats 2/3 cup water 1 tablespoon natural peanut butter 1 tablespoon natural jam or jelly
Directions
1. STOVE: Combine oats and water in a small saucepan and bring to a boil. Reduce heat and let oatmeal simmer until 90% of the water is absorbed. 2. OR MICROWAVE: Combine oats and water in microwave dish, press "oatmeal" then start to microwave (for 3 min 15 seconds). 3. Remove from heat. 4. Pour oatmeal into a bowl and top with peanut butter and jelly/jam.
Apple Sauce & Yogart Oatmeal
Apple sauce purchased in glass jars has a long shelf life. Blueberry & Mixed Fruit Oatmeal

OATMEAL PANCAKES
Ingredients
1-1/4 cups all-purpose flour 1/2 cup Large Flake Quaker® Oats or Quick Quaker® Oats (uncooked) 2 teaspoons baking powder 1/4 teaspoon salt (optional) 1-1/4 cups fat-free milk 1 egg, lightly beaten 1 tablespoon vegetable oil 1 cup fresh or frozen blueberries (do not thaw) 1 medium-size ripe banana, mashed, and 1/8 teaspoon ground nutmeg 3/4 cup finely chopped apple, 1/4 cup chopped nuts and 1/2 teaspoon ground cinnamon 1/2 cup semisweet chocolate chips
Preparation
1.In large bowl, combine flour, oats, baking powder and salt; mix well. In medium bowl, combine milk, egg and oil; blend well. Add to dry ingredients all at once; stir just until dry ingredients are moistened. (Do not overmix.) Add one of the stir-in options, if desired; mix gently. 2.Heat skillet over medium-high heat (or preheat electric skillet or griddle to 375°F). 3.Lightly grease skillet. For each pancake, pour 1/4 cup batter into hot skillet. 4.Turn when tops are covered with bubbles and edges look cooked. Turn only once. |

APPLE & MAPLE SYRUP OATMEAL
Ingredients
3 cups apple juice 1/2 teaspoon ground cinnamon 1/4 teaspoon salt (optional) 1-1/2 cups Large Flake Quaker® Oats or Quick Quaker® Oats (uncooked) 1/2 cup chopped fresh or dried apple 1/4 cup maple syrup 1/2 cup chopped nuts (optional)
Preparation
1.In medium saucepan, bring juice, cinnamon and salt, if desired, to a boil; stir in oats, apple and syrup. 2.Return to a boil; reduce heat to medium. Cook 1 minute for quick oats or 5 minutes for old fashioned oats or until most of juice is absorbed, stirring occasionally. 3.Stir in nuts, if desired. 4.Let stand until desired consistency.
Variations
MICROWAVE DIRECTIONS: In 3-quart microwaveable bowl, combine all ingredients except nuts. Microwave on HIGH 6 to 7 minutes for quick oats and 9 to 10 minutes for old fashioned oats or until most of juice is absorbed. Stir in nuts, if desired. Let stand until of desired consistency.
